Baked Pie Shell (purchased or home-made)
1 Qt. strawberries
2/3 cup sugar
3 Tbl. cornstarch
1/2 cup water
4 oz. cream cheese
Red food coloring

Cut up 1-1/2 cups fresh strawberries and cook with 1/2 cup water
about 2 minutes. Slice remaining strawberries in half.
Combine the sugar with the cornstarch and add to cooked berries.
Cook and stir until thick and bubbly.
Add a few drops red food coloring.
Stir and remove from heat.

Spread softened cream cheese in cooled pie shell.
Line with half of the sliced berries,
pour cooked berries on top,
then decorate with more sliced berries.
Refrigerate. When cool, slice and serve with whipped cream.

THIS IS TOTAL YUM!!!!! Lovely, lovely recipe too. I think we both have a "Jones" for creamy consistencies...are you still hooked on the Greek yogurt with cocoa and raspberries? I AM!! But now, it is with CHERRIES! Hmmmm....what other tantalizing fruit can we feature next? I HAVE AN IDEA!!!! Beautiful post dear one! Anita

I've always wanted strawberry pie but have never had it. It looks sooo tasty! I came over to your blog after I'd seen through Blogger Stats that you'd been to mine. Of course I was hooked as soon as I saw the dogs. Then when I saw the one cooking breakfast in the kitchen...that sealed it. I had to become a follower. Love the images and paintings.

floor of my sorority
bedroom with two
forks and ate the
WHOLE thing!!! I love
that memory....This
looks delish : )
No, we didn't make it
to Seattle, this trip,
but fun to think that
we might have twins in
the area!!! I wonder if
the twins were tall, as
we both are! Today is
my last day here and tomorrow
it's home to the Midwest.
Although I realize all
good things must end, this
is the hardest part of
the trip, for me.
