CHOCOLATE!


Is it a muffin or a cupcake?
Not that it matters, but it sounds healthier to eat a muffin than a cupcake!

I made these today. Supposedly a muffin recipe but I just think a yummy totally chocolate little miniature cake is most assuredly a cupcake! Especially a recipe called

"Chocolate Fudge Muffins"

Sift together into a large bowl:
Heaping 1-1/2 cups flour, 1/2 cup unsweetened cocoa, 1 tbsp baking powder, 1/8 tsp salt.
Stir in 1/2 cup firmly packed light brown sugar.

Lightly beat 2 large eggs in a large bowl, then beat in 1 cup sour cream, 6 tbsp oil or melted butter, and 3 tbsp corn syrup. Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients. I also added about 1/2 cup of miniature chocolate chips, and to some of the batter some dried chopped cherries. Stir gently until just combined. Do not overmix.

Spoon the batter into paper lined muffin pan. (Notice how they aren't called "Cupcake Pans"???)
Bake in preheated 400 degree oven for 20 minutes, until well-risen and firm to the touch.

I made some frosting with a little butter, vanilla, cream cheese and powdered sugar, adding a bit of water as needed. Makes 12 "muffins"

hmmm, I'm thinking the frosting gave it away as a cupcake. :) Those sound yummy. It's freezing here and SNOWING this morning so after I go work out I think I"ll come home and bake before our girls are home for the weekend. I think I'm going to empty the freezer of old banana's and make Whole Wheat Sour Cream Chocolate chip bread.

Just a note ... they do actually seem more 'muffin-y' than cupcakey.
The texture is heavier. So don't expect a light and fluffy cupcake if you make these. FYI !!!

Oh my! These look like just the thing for teatime tomorrow. I am sure Miss Rachel or Miss Elizabeth will jump at the opportunity to whip them up. (Miss Lydia is not much for cooking, preferring to lounge on the deck with a book awaiting teatime.)

I think we may skip the frosting and call them "lite." Tee Hee : D

Well I finally made the muffins for dessert last night. YUMMY! My family has raved about them all day, begging for more. I used dark choc chips and left off all notions of frosting. DELISH!!! It's already being hailed as a family heirloom recipe. : D
